Ximenez Spinola Exceptional Harvest

Bodega Ximenez-Spinola are based just outside Jerez de la Frontera in the heart of the Sherry triangle but they aren’t your standard Sherry house. This unique white wine is made from the Pedro Ximenez grape, which is normally reserved for the sweetest of dessert wines.

Instead the grapes are left on the vine for 21 days after the normal harvest time which concentrates the aromas and sugars. After a long, slow, fermentation the result is an incredibly aromatic wine where the acidity and natural sweetness interplay with ripe flavours of figs, raisins and hints of pastry.
