Valdespino “Tio Diego” Amontillado

A close relative of the Inocente Fino. The two begin life as the same wine but based off how barrels evolve they are quickly identified as being suited for one wine or the other. For the barrels destined to become Tio Diego the evolution process is longer, about 15 years on average, and during the process the protective layer of flor dies off, exposing the wine to oxygen.

A medium-bodied and very dry Sherry. It starts off with a similar salty freshness to the Inocente but develops richer notes of burnt almonds, walnuts and a hint of Mediterranean herbs.
